Houmous stuffed roasted tomatoes

How to make

  1. Cut the top off the tomato & scoop out the inside.
  2. Spray with olive oil.
  3. Roast in oven until coloured.
  4. Leave to cool.
  5. Fill the tomato with houmous.
  6. Lightly sprinkle paprika over the top of the houmous.
  7. Drizzle with olive oil & garnish with spring of fresh parsley.

Ingredients

Large beef tomato, fresh houmous, olive oil, paprika and parsley.
